Roux 66 is the catering partner to Satchmo’s (www.satchmosaz.com) the highest rated BBQ and Cajun restaurant in Flagstaff. We are located on Historic Route 66, using the location and a play on the classic Cajun roux to come up with the name. The owner, Jamie Thousand, started Satchmo’s due to increased demand from friends attending his backyard BBQ parties. Jamie has a passion for smoking meats and preparing extraordinary meals. He has taken that passion and created one of the most popular restaurants in town, so popular that the demands for catering were too much for the small restaurant to accommodate. Jamie not only wanted to alleviate the burden on the Satchmo’s kitchen to keep up with the catering requests, but saw a need for additional event space in town, as well as the opportunity to be creative in the kitchen!
