We're looking for a Restaurant Manager for Wicked Maine Lobster who is passionate about leadership, efficiency, and quality. In this role, you will oversee both restaurant operations and manage our signature popcorn production process for Wicked Popcorn - ensuring fresh popcorn deliveries and optimal staffing schedules for smooth operations.
Responsibilities:
Staffing & Scheduling:
- Create and manage schedules for both restaurant locations, ensuring proper staffing coverage during peak and off-peak hours.
- Handle time-off requests, adjust schedules as necessary, and ensure sufficient staffing for critical roles (e.g., cooks, cashiers).
- Track employee attendance, overtime, and hours worked, ensuring adherence to labor laws.
- Lead and supervise staff, providing guidance and training as needed to maintain a high standard of service.
Inventory Management & Ordering:
- Track inventory for food items, supplies, and packaging materials, ensuring you never run out of essential products.
- Place and manage orders with suppliers, keeping costs in line while maintaining stock levels.
- Monitor food quality and waste, ensuring the FIFO method is implemented for optimal inventory rotation.
Popcorn Production & Delivery:
- Manage daily popcorn production to meet restaurant demand, maintaining high standards of quality and freshness.
- Oversee the packaging and delivery of popcorn to The Rady Shell (or other delivery locations) on a consistent schedule.
- Ensure all popcorn orders are delivered on time, with proper packaging to maintain freshness and quality.
- Adjust production based on sales trends, ensuring that there is enough product for delivery but no excess waste.
Operational Oversight:
- Monitor restaurant operations to ensure that everything runs smoothly, including food preparation, customer service, and cleanliness.
- Handle any issues that arise during shifts quickly and efficiently, working to resolve problems in a timely manner.
- Communicate clearly with staff at both locations to ensure everyone is aligned on goals, promotions, and expectations.
- Collaborate with Business Office on company wide goals and initiatives.
Performance & Reporting:
- Track key performance metrics like food costs, sales, and staff performance to ensure operational efficiency.
- Provide feedback and coaching to employees to help them improve their performance and maintain high service standards.
Training & Development:
- Train new employees on restaurant procedures, food safety standards, and customer service expectations.
- Foster a positive, collaborative work environment where employees feel supported and motivated.
Qualifications:
- 2+ years of management experience in a fast-casual or restaurant setting.
- Strong organizational and leadership skills.
- Experience with scheduling software or the ability to quickly learn new systems.
- Strong understanding of inventory management and cost control.
- Ability to manage multiple tasks in a fast-paced environment.
- Excellent communication and interpersonal skills.
- A passion for food, customer service, and creating an outstanding dining experience.
- Must be able to handle physical tasks, including lifting and moving supplies.

Our Story
Two brothers born and raised in southern Maine. Bringing the absolute best Maine seafood dishes to southern California.
At just 21 years old, Owner/Founder Alex Howard, backpacked up and down the coast of California, landing himself in San Diego in April of 2014. After realizing there wasn’t a huge selection of east coast seafood in San Diego, Alex came up with the idea to sell Maine Lobster Rolls and New England Clam Chowder at local Farmers Markets. In October 2014, WML got invited to the Oceanbeach farmers market. Alex would then call his older brother, Eric (24), to help him start and run the business for the remainder of the year.
Hustling up to 10 Farmers Markets a week, WML had its opportunities to sell its dishes at large music venues and festivals. WML would then become an anchor and fan favorite at global wide music festivals such as Coachella, Stagecoach, Bonnaroo, Life is Beautiful, FireFly and many more.
After diving into large music venues, WML had its first brick and mortar location in April 2016. Inside the Liberty Public Market in Point Loma San Diego. Quickly they then would add a 2nd location in the year 2018. WML had its first brick and mortar location in downtown San Diego. They became a heavy favorite in the new Little Italy Food Hall.
WML has 6 New Restaurants set to open in the upcoming 2020 and 2021 years. With new locations in National City, Carlsbad, Hawaii (Waikiki), and also 3 new stores in LA, (Culver City, Topanga, and Edin Park)
